Easy Kale Feta Salad

I have been preparing different versions of this kale feta salad for years, but only recently discovered that massaging the kale makes such a noticeable difference. When a friend asked me for the recipe, I realised I had never written it down. This is my first attempt at putting the recipe into words, so please let me know how it turns out!

I enjoy swapping the ingredients around: try pear in place of apple, cranberries instead of currants, or Parmesan rather than feta, for example. It is excellent served as a side dish, or eaten on its own for lunch the following day.

Ingredients

  • 1 bunch kale, tough stems removed and leaves finely chopped
  • ½ teaspoon salt
  • 15 ml apple cider vinegar
  • 1 apple, diced
  • 50 g feta cheese
  • 40 g currants
  • 35 g toasted pine nuts

Directions

  1. Place the kale in a large mixing bowl and massage it with the salt for 2 minutes.
  2. Drizzle the vinegar over the kale, then toss until evenly coated. Gently fold through the apple, feta cheese, currants and pine nuts.
