Chrononutrition: How Meal Timing Affects Metabolic Health

What we eat is not determined solely by the foods on the plate. Meal timing can also affect the way the body uses and processes nutrients. This connection is examined by chrononutrition, a field combining nutrition, chronobiology and endocrinology to explore how eating schedules interact with the biological clock and may affect metabolic health.

Research indicates that dietary patterns more heavily concentrated at night are linked to a higher prevalence of overweight, insulin resistance and metabolic syndrome. This association does not appear to depend only on total calorie intake. The time at which food is eaten can change responses including blood glucose, insulin secretion, feelings of hunger, energy expenditure and fat storage.

According to Andressa Cabral, a nutrition specialist and lecturer in Nutrition at Afya Unigranrio, the body follows biological rhythms that regulate various functions over 24 hours, including processes related to digestion and metabolism.

“Our bodies do not operate in the same way throughout the day. There are natural variations in hormone production, insulin sensitivity, energy expenditure and other metabolic processes. Therefore, the time at which we eat can affect the body’s response to that meal,” she explains.

Why does meal timing matter?

During the day, the body is better equipped to receive, digest and use energy. As night progresses, however, metabolic functioning naturally shifts in line with the circadian cycle.

The review Chrononutrition and Energy Balance: How Meal Timing and Circadian Rhythms Shape Weight Regulation and Metabolic Health, published in the journal Nutrients in 2025, highlights the relationship between meal schedules and the so-called peripheral clocks found in different tissues involved in metabolism. When eating times are out of step with the biological cycle, changes in insulin sensitivity and other metabolic pathways may occur.

This helps explain why two people can eat similar meals, both in quantity and composition, yet have different metabolic responses according to when they eat.

“The issue is not one isolated meal eaten later. What deserves attention is the pattern. When most food intake consistently takes place at night, particularly close to bedtime, there may be a mismatch between the time the body receives energy and the period when it is biologically best prepared to process it,” says Andressa Cabral.

This does not mean, however, that having dinner after a certain time automatically causes weight gain. Metabolism is influenced by several factors, including the amount and quality of food, physical activity levels, sleep, routine and individual characteristics.

Night-shift workers may find it harder to regulate eating

For people who work night shifts, the connection between food and the biological clock may be even more complicated. Working during the early hours of the morning changes light exposure, sleep and usual eating times, which may lead to circadian rhythms becoming desynchronised.

According to Bruno Dubeux, a doctor and lecturer on the postgraduate programme in Nutrology at Afya Educação Médica in Rio de Janeiro, the approach in these circumstances should not simply be to apply the same schedules used by people with conventional routines to night workers.

“We cannot think of a universal schedule that works for everyone. Those who work at night have a different pattern of sleep, wakefulness and eating. The aim should be to minimise misalignment and create an eating routine that fits that person’s reality, while keeping quality, quantity and meal distribution in mind,” the doctor states.

Carbohydrates by day and protein at night?

Chrononutrition also raises a common question: is there a better time for each nutrient? The answer is not straightforward. Although the body shows circadian variations in how it uses nutrients, there is no universal rule stating that carbohydrates should only be eaten in the morning or that protein must be concentrated at night.

The idea that people must stop eating carbohydrates at night in order to lose weight lacks sufficient evidence to be considered a general rule. Timing may affect the metabolic response, but it does not remove the importance of energy balance and diet quality.

Chrononutrition’s main contribution is not to create a list of forbidden times, but to show that eating routines are also part of metabolic health. “We do not need to turn the clock into another source of guilt around eating. The idea is to understand that the body has its own rhythms and that we can organise our routines to respect them whenever possible,” Bruno Dubeux explains.

According to the doctor, people who regularly eat large meals close to bedtime may benefit from bringing dinner forward. Whenever possible, the recommendation is to leave an interval of around two hours between the meal and going to bed. For those who need to eat during this period, lighter dishes are preferable, while large meals or foods high in fat should be avoided.

“Meal timing matters, but it is only one part of an equation that also includes diet quality, quantity, sleep, physical activity and each person’s circumstances,” Bruno Dubeux concludes.
